Ingredients

Cilantro Lime Rice

  • 1 cup uncooked long-grain-rice (cooked according to package intructions)
  • ½ cup cilantro, chopped
  • 2 tbsp lime-juice, freshly squeezed
  • ½ tsp salt (I add it to the cooking water)

Chipotle and Lime Black Beans

  • 2 15 oz cans black-beans, rinsed and drained
  • 2 tbsp lime-juice, freshly squeezed
  • 1 chipotle-pepper in adobo-sauce + 2 tbsp sauce, chopped finely
  • salt, to taste

Pico de Gallo (sub 1 ½ cups diced tomatoes)

  • cups tomato, diced small (about 3 medium tomatoes)
  • ½ cup cilantro, chopped finely
  • 2 tbsp lime-juice
  • ½ cup onion, diced small (about ½ medium onion)
  • salt, to taste

Serving

  • 1 large avocado, sliced or cubed
  • ½ cup vegan sour-cream, blend with hot-sauce if desired (sub vegan-mayo)
  • 4 large tortillas (10-inch)

Instructions

  • Cilantro Lime Rice: Once the rice is cooked, remove from heat and fluff with a fork. Add lime-juice then simmer & stir to blend. Taste for seasoning & add more if desired. Cover with lid to keep-warm.
  • Pico De Gallo: In a medium-bowl, combine all ingredients well. Taste & adjust flavors if necessary. Put aside.
  • Chipotle and Lime Black Beans: In a medium-skillet over moderate heat, add the adobo-sauce, chipotle-peppers and beans. Bring to a little simmer to heat for a few minutes. Remove from heat then stir in salt & lime to taste. Keep covered.

For Serving

  • Warm a tortilla at a skillet over moderate heat for a few seconds on each side. Put on a flat-surface then add the rice, tomatoes, avocado, beans and sour-cream.
  • Fold the sides then tuck at the upper flap beneath the filling as you roll. Continue to roll closely till finish.
