- 1 zucchini ends removed and sliced
- 1 tomato sliced or handful of cherry tomatoes
- ⅛ cup sliced red onion
- 4 tbsp hummus
- 2 large tortillas I use Mission gluten-free
- 2 slices white cheddar or chipotle gouda cheese
- 1 cup kale tough stems removed
- 1 tbsp olive oil
- salt and pepper to taste
Heat on the grill or skillet to medium-heat. Remove the ends off the zucchini and slice length wise into strips. Toss the sliced zucchini with olive oil. sprinkle it with salt and pepper.
Put the zucchini slices be placed directly on the grill, let cook for 3 minutes. Turn and cook for 2 more minutes. Set zucchini aside.
Put the tortillas for about 1 minute on grill, or till grill marks appear and tortillas become pliable.
Take tortillas off the grill and make wraps, 2 tbsp of hummus, zucchini slices, 1 slice of cheese, tomato slices, ½ cup kale, onion. Wrap tightly and serve immediately.
